The greatest thing about summer picnics is sand and ants in your food. Just kidding! Though, there is no other time of year when our meals are menaced with these special ingredients. Mississippi has miles of shoreline on the Gulf and around its lakes. It’s refreshing just looking at water, knowing that it’s there, ready to temper the summer heat. Sand is part and parcel to the Gulf menu, and ants are usually picnic crashers at all of our waterside summer outings. 

This cool meal is designed to give everyone the day off. Sure, there’s some prep the day before the picnic, but everyone can put their feet up and watch the waves when beach day arrives.

Easy Cold Fried Chicken is the main event. Since poultry is the king of proteins in Mississippi, it seems right to invite it along. These boneless breasts are easy to eat, and an important aspect when cooking is that this chicken is only lightly dusted with flour. This results in less grease being absorbed during frying, which makes it better when served cold. I am a self-taught chicken fryer. After some hits and misses, I have found this recipe to be nearly foolproof. It just requires a bit of patience and some very simple ingredients.
